depending on the crash, sometimes you can to some degree.
on my interstate crash (i was rearended at somewhere around 50) I could not only move my slide onto my back, but I could "steer" with my arms/feet/back-of-helmet.
however when I highsided off a turn in the wet... no way around it, I was tumbling on my hands and knees sideways.. tuck and roll best you can....
all my other crashes at speed were somewhere in between....
by far the most painful though, were the ones where I didnt tumble or slide, but just STOPPED.... all of them at low-ish speeds on dirtbikes. you hit a sand berm shoulder first... you stop. tree? you stop. lose the bike in the air.... you stop when you come down. lol.
